On Wildly Delicious Season 2 Episode 7, we're celebrating Cinco de Mayo with a guacamole bar! We have three wildly delicious guacamole recipes: classic, pineapple, and strawberry with the help of our Rise Garden. If you've never tried strawberry guacamole, don't skip this one. It's savory with the perfect amount of sweetness. Make one or all of the recipes for a delicious chip and dip night, taco night, or an average Wednesday night!
Harvested from our Rise Garden: cherry tomatoes, cilantro, jalapenos
Classic Guacamole
Ingredients
- 3 ripe large avocados
- 1/2 small red onion, finely diced
- 10-12 cherry tomatoes (1-1 1/2 roma tomatoes)
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño pepper, seeds removed and diced
- 2 garlic cloves, minced
- Juice from one lime
- 1/2 tsp sea salt
- Dash of cumin
Directions
Mash avocados. Mix ingredients in and serve.
Strawberry Guacamole
Ingredients
- 3 ripe large avocados
- 1 cup strawberries, diced
- 1 jalapeno pepper, seeds removed and diced
- 1/4 cup red onion, finely diced
- 2 tbsp chopped fresh cilantro, chopped
- Juice from one lime
- 1/2 tsp sea salt
Directions
Mash avocados. Mix ingredients in and serve.
Pineapple Guacamole
Ingredients
- 3 ripe large avocados
- 1 1/2 cups fresh pineapple, diced
- 1 jalapeño pepper, seeds removed and diced
- 1/2 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 tsp sea salt
- Juice from one lime
- Dash of cumin
Directions
Mash avocados. Mix ingredients in and serve.
